Dark Chocolate Fudge

A rich dark chocolate fudge with a chocolate coating.


25 g 75% Cocoa Chocolate
100 g 99% Cocoa Chocolate
1 Tin Evaporated Milk
10 ml Honey
225 g Sugar
5 ml Vanilla Essence


  1. Grease a 24cm square tin and line the bottom and sides with greaseproof paper.
  2. Put the sugar, 99% chocolate, evaporated milk, honey and vanilla essence in a heavy based saucepan and heat gently until the sugar has dissolved, stirring continuously.


Leave the chocolate off the top for a slightly less chocolatey fudge.
