Shortcrust Pastry

4 tsp Cold Water
25 g Lard
25 g Margarine
100 g Plain Flour


  1. Mix flour and salt together with cold knife.
  2. Cut fat into small pieces and add to flour.
  3. Using both hands rub fat into flour between finnger and thumb tips after 2-3 minutes there will be no lumps of fat left and the mixture will look like fresh bread crumbs.
  4. Add the water a little at a time stiring with a round bladed knife (table knife) until the mixture begins to stick together.
  5. With one hand, collect it together and knead lightly for a few seconds to give you a firm smooth dough.
